In the Routes menu you define the dial plan that determines which trunk to use for outgoing calls or which action to take. As an example you could define that international calls should be made via VoIP provider and local calls via ISDN.
Basically you define a number of rules that execute a script when a match is found. You can either use one of the predefined scripts or create your own that may do anything that Asterisk is capable of!
